- Large egg 3
- Evaporated milk 1 can
- Water 1 cup
- Vanilla essence 2 teaspoons
- Brown sugar 1/2 cup
- Julie’s Butter Crackers 6 pieces
In a food processor or by hand, crush the Julie’s Butter Crackers into fine crumbs and set aside. Whisk the eggs, brown sugar, evaporated milk and vanilla essence to form a custard mixture in a medium bowl. Combine the fine crumbs into the custard mixture and stir until completely incorporated.
Pour the custard mixture into a round mould and steam it for 30 minutes or until mixture is firm. Test by inserting a toothpick in the centre. If it comes out clean, the pudding is done.
Cool the pudding and then chill in the refrigerator for an hour or two. Place a plate over the round mould, hold firmly in place and turn over gently. Decorate it with your favourite fruits and enjoy!
